Beef Rouladen

Personal Notes – This recipe is one of my favourites as it has difficult elements but is still simple enough to make. This put me out of my comfort zone the first time I made this recipe but with a little practice it is quick and easy to prepare and well worth the final product. There are also several variations to this recipe and you can experiment with using different meats and fillings. I discovered this recipe while researching the Paleo Diet, it was one of the first recipes that gave me variety and tasted amazing.

Tips – It can be useful if you have someone to help tying the twine, however if you have no one to assist you can use toothpicks to temporarily hold the meat until you can tie the twine together. Ensure to remove all toothpicks and twine before serving!

  • 6 slices rouladen beef (thin slices of topside or round roast beef)
  • ¼ cup Dijon mustard
  • 6 slices bacon
  • 1 onion, sliced
  • 4 – 6 sour pickles, sliced (to taste)
  • 1/3 cup beef stock
  1. Preheat oven to 150 degrees Celsius.
  2. Lay the meat slices open and spread mustard along each slice lengthways.
  3. Place a slice of bacon on top of the mustard and top with a layer of onion and sour pickles to taste.
  4. Fold the ends of the meat slice and roll. Tie each roll together with kitchen twine (to hold the rouladen together while cooking).
  5. Brown each side of the rouladens in a large fry pan.
  6. Place rouladens in a deep pan and pour beef stock over.
  7. Cover and place in preheated oven for approximately 60 minutes.
  8. Remove from oven and cut off all twine, slice in half. Serve with your choice of sides.
