Chicken with Almonds

Personal Note – This is one of my favourites because it is quick, easy, healthy and tasty. The recipe came from my wife’s mum and is so enjoyed that it is now made regularly (usually every week) by all family members. Even my teenage sons give it a go cooking every once in a while (one of the only things they actually cook on the gas cooktop!)

Tips – Recommend making with a pre-cooked barbeque chicken (with meat removed and chopped), it always tastes great with the extra flavour.

  • 1 chicken or equivalent in boneless pieces (fresh or pre-cooked)
  • 4 tablespoons olive oil
  • 125g almonds, slivered or flaked
  • 4 celery sticks, sliced
  • ¼  to ½ cabbage, shredded
  • 200g mushrooms, sliced
  • 250g beans (fresh or frozen), sliced
  • 200ml chicken stock
  1. Steam the fresh chicken (or use a cooked chicken) and cube the meat.
  2. Heat 2 tablespoons of oil, fry almonds for 2 minutes or until just toasted. Remove from heat and place on a paper towel.
  3. Heat 2 tablespoons oil, fry chicken for 3 minutes. Add vegetables and stir fry for 2 minutes.
  4. Add chicken stock, put on a lid and steam for no more than 5 minutes.
  5. Serve with rice, sprinkle toasted almonds on top when served.
