Ingredients:
- 1 chicken or equivalent in boneless pieces (fresh or pre-cooked)
- 4 tablespoons olive oil
- 125g almonds, slivered or flaked
- 4 celery sticks, sliced
- ¼ to ½ cabbage, shredded
- 200g mushrooms, sliced
- 250g beans (fresh or frozen), sliced
- 200ml chicken stock
Method:
- Steam the fresh chicken (or use a cooked chicken) and cube the meat.
- Heat 2 tablespoons of oil, fry almonds for 2 minutes or until just toasted. Remove from heat and place on a paper towel.
- Heat 2 tablespoons oil, fry chicken for 3 minutes. Add vegetables and stir fry for 2 minutes.
- Add chicken stock, put on a lid and steam for no more than 5 minutes.
- Serve with rice, sprinkle toasted almonds on top when served.
