Ingredients:
- 1/2 kg lean ground beef
- 1/2 cup finely chopped onion
- 2 1/2 tbsp fresh lemon juice
- 2 tbsp Dijon mustard
- 1 tsp finely chopped garlic
- 1 tsp grated lemon peel
- 1/2 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
Method:
- Preheat oven to 200°C.
- Combine all ingredients in a bowl. Shape mixture into 3 1/2 cm balls. Place balls in a nonstick foil-lined rimmed baking sheet.
- Bake until completely cooked, about 25 – 30 minutes. Cooked meatballs may be frozen for up to 2 months.
