- 2 tbsp balsamic vinegar
- 2 tbsp extra-virgin olive oil
- 1/4 tsp salt
- 6 cups seedless watermelon chunks (2 cm)
- 3/4 cup diced seeded English cucumber
- 3/4 cup crumbled feta cheese
- 1/4 cup finely chopped red onion
- 1/4 cup coarsely chopped pitted kalamata olives
- 1/4 cup slivered fresh basil
- 1/4 cup slivered fresh mint
- To prepare dressing, whisk together vinegar, oil and salt until blended.
- Combine all remaining ingredients in a bowl.
- Add dressing and toss to combine. Serve immediately.
